Lunchbox Pets - Chocolate-Chip Kitties and Peanut-Butter Puppies....

While you may not be able to tuck your furry friend in your pocket for going back-to-school, you can create these sweet reminders of your loving pets to brighten up your lunchtime. This month we're making Lunchbox Pets - a recipe for peanut butter puppies and chocolate chip kitty cookies. You can make whatever flavor of cookie dough you like for the puppies and kitties. If you have peanut allergies, peanut butter can be substituted for almond or soy-nut butter. You can also use premade cookie dough for this recipe. If the premade dough comes in a roll, you can just slice the cookies before assembling the faces of the puppies and kitties. Let's roll up our sleeves and get to work!
For this recipe you'll need:
1 recipe Peanut-Butter Cookie Dough
1 recipe Chocolate Chip Cookie Dough
1 small tube decorator gel or frosting in brown or black
Peanut-Butter Cookie Dough
1/2 cup butter, softened
1/2 cup peanut butter (crunchy or creamy)
1 cup brown sugar
1/2 tsp. baking soda
1/2 tsp. baking powder
1/2 tsp. vanilla
1 1/4 cups whole wheat flour
Beat together the butter, peanut butter and sugar in a mixing bowl. Add the egg, baking soda, baking powder and vanilla and mix well. Lastly, add the flour and mix until fully combined into a smooth cookie dough that can be formed into a ball in your hand. Assemble the cookies as directed below. Bake on 375*F. for 6 - 8 minutes.
Chocolate-Chip Cookie Dough
1 cup butter, softened
1 1/2 cups brown sugar
1 tsp. baking soda
1 tsp. vanilla
2 1/4 cups whole wheat flour
2 cups chocolate chips
In a mixing bowl, beat together the butter and sugar until fluffy. Add the eggs, baking soda and vanilla and mix well. Next, add the flour - stirring until fully combined into a soft, smooth dough that can be formed into a ball in your hand. Lastly, mix in the chocolate chips. Assemble according to the directions below and bake at 375*F. for 8 - 10 minutes.
Assembling the Cookies
1. Set up a workspace complete with your cookie dough, pretzels and pecans, candy pieces and a bowl with a small amount of white sugar for dipping the bottom of your glass. Also remember to set out a flat bottom drinking glass or cup. You'll also need to set up your cookie sheets in a convenient location for assembling the puppies and kitties.
2. Now you're ready to start making some pets come to life! Roll a portion of cookie dough in your hand until it looks like this, smooth and round. We made ours about 1 1/4 - 1 1/2 inch in diameter.
Press the cookie dough flat...remember to sugar your glass so it doesn't stick!

Our kitty and puppy have eyes! You'll want to add a m&m nose as well.
