Recipe: Spaghetti Squash Bread

Unfortunately the bread disappeared too fast to get a picture!

    My sister made this lovely quick bread as a way to use up some of our enormous harvest of spaghetti squash.  We thoroughly enjoyed it and I think its my new favorite quick bread recipe.  The spaghetti squash created a rich, moist flavor and texture - better than zucchini - for which this recipe was originally intended.  In my opinion, the best way to serve this bread is warm with butter on top!
 
Ingredients:

1 1/2 cups all-purpose flour
1 teaspoon ground cinnamon
1/2 teaspoon baking soda
1 egg, beaten
1 cup sugar
1 cup roasted spaghetti squash (the shredded pulp or flesh)
1/4 cup cooking oil
